ANDAMAN
SEAFOOD CEVICHE


(Serves 4-5 People)

A Thai spin on the famous Latin-American dish. It is full of flavors and easy to make. This dish will be sure impress your friends at your next get-together.

You will need:

4oz (½ bottle) of Ayara’s Seafood Sauce (Buy Now)
1-Pound Cooked Crab Meat
½ Pound Scallops
½ Pound Shrimp
Fresh cilantro, chopped, to taste
Optional – avocado, diced
1 Package Wonton Skins
4 cups Soybean Oil or Canola Oil

Directions:

  1. Boil 4 cups of water. When water reaches boiling point, cook scallops and shrimp for approximately 2 minutes. Do not over cook.
  2. Chop shrimp and scallops into small pieces.
  3. In a bowl, gently toss shrimp, scallops, and crabmeat with seafood sauce. Add cilantro and avocado, and seafood sauce. Cover and chill for 30 minutes.
  4. While ceviche is chilling, fry wonton skins – Heat oil at medium-high heat. When hot, fry each skin for approximately 1-minute or until it turns golden brown. Do not cook too many at the same time, as oil’s temperature will drop and wontons will end up absorbing the oil. Remove wontons when golden brown, drain excess oil with paper towels, and let cool. Serve with ceviche – enjoy!!
