Thai Corn Patties

You Will Need:

    • 1 Cup Corn kernels
    • ¼ Cup Flour
    • 1 Large Egg
    • 1 Teaspoon Baking powder
    • ¼ Teaspoon Salt
    • ¼ Teaspoon White Pepper
    • ½ Cup Vegetable Oil
    • 1 Cup Thai Cucumber Sauce

     
    Directions:

    1. Line baking sheet with paper towels. In a bowl, add the corn, flour, egg, salt and pepper. Mix well.
    2. Heat oil at medium heat until hot. You can test this by dropping a little bit of the batter in the oil.
    3. Carefully drop rounded spoonfuls into hot oil and slightly flatten. Cook on medium-high heat until golden brown, flipping once. It should take about one minute per side.
    4. Place patties on baking sheet or cooling rack and serve immediately with Thai Cucumber Sauce. Patties can be reheated in the oven at 350F for 10-15 minutes.
